Fried Green tomatoes
Category: side dish
1 egg
1 Tbsp milk
1/3 cup all purpose flour
1/3 cup yellow cornmeal
1 tsp salt
1/4 tsp paprika
1/8 tsp ground red pepper (cayenne)
1/8 tsp black pepper
3 firm green or under ripe tomatoes (about 1 1/2 lb total)
Vegetable oil for frying
Beat egg and milk in a small bowl. Combine flour, cornmeal, salt, paprika, red pepper and black pepper on waxed bowl.
Core tomatoes; cut a thin slice from the top and the bottom of tomatoes and discard. Cut each tomato crosswise into 4 slices. Dip tomato slices in egg first, then in cornmeal mixture to coat. Heat 1/4 inch in a large nonstick skillet over medium high heat. In batches, brown tomatoes on both sides, turning once, 1-2 minutes per side. Remove with a slotted spatula to paper toweling to drain. Serve immediately.
