Oven fried potatoes

Category: side dish

Serves 5
Complete in 50 minutes

3 lb red new potatoes, cut in half
1 medium onion, diced
3 Tbsp olive oil
1 tsp dried Rosemary,crumbled
1/2 tsp salt
1/4 tsp black pepper

Heat oven to 425. Lightly oil a roasting pan.
Place potatoes, onion, oil, rosemary, salt and pepper in a pan, toss to coat.
Roast potatoes in heated 425 oven until tender, 30-40 minutes, stirring about halfway through.

NOTE: When new potatoes- young potatoes of any veriety are large, cutting them into quarters will reduce their cooking time.
