Fried onion rings

Serves 6
Complete in 48 minutes
Batter:
2 eggs, separated
1 bottle (13 oz) beer
1/3 cup butter, melted
2 cups all purpose flour
Onion rings:
6 cups vegetable oil
3 medium onion (1 1/2 lbs) cut into 1/2 inch thick slices and separated into rings
1/4 cup all purpose flour
1/2 tsp salt
Prepare batter; beat egg yolks in a medium bowl for 3 minutes or until light colored. Stir in beer and butter.
Beat egg whites with clean beaters in a small bowl until stiff but not dry peaks form. Fold whites into batter.
Prepare onion rings; heat oil in a large saucepan until temperatures reach 375 on a deep fat thermometer. Adjust heat as needed to maintain temperature. Line a baking sheet with paper toweling.
Toss onion rings in flour to coat; shake off excess flour.
Dip onion rings, one at a time, in batter; let excess batter drain back into the bowl. Place rings in hot oil, several at a time; do not overcrowd, cook 2-3 minutes or until golden brown. Remove with slotted spoon, letting excess oil drain back into pan; place rings on lined baking sheet. Repeat with remaining rings and batter. Sprinkle with salt.
