Charlene's Recipe

Zesty chicken salad

2 Tbsp reduced fat mayonnaise
3 Tbsp chopped sweet gherkin pickles
1 Tbsp pickle liquid
1 tsp prepared mustard
1/8 tsp black pepper
1 cup cooked cubed chicken
4 leaves of lettuce
1 harb cooked egg, shelled and sliced
4 large cherry tomatoes, sliced

Combine mayonnaise, pickles, pickle liquid, mustard and pepper in a small bowl. Stir in chicken. Mound onto lettuce leaves. Top with egg and tomato slices.
