Caramelized Onion quesadillas

1 Tbsp olive oil
1 red onion, halved lengthwise and thinly sliced crosswise
4 green onion, sliced
3 cloves garlic, chopped
3/4 tsp ground cumin
1/4 tsp dried oregano, crumbled
1 Tbsp fresh lime juice
4 flour tortillas (10 inch)
1 cup shredded pepper jack cheese (4 oz)
1 cup shredded sharp Cheddar cheese (4 oz)
Salsa fresco (or)
Jarred salsa (optional)
Sour cream (optional)
Heat in a skillet over medium low heat. Add red onion, green onions and garlic. Cook covered, stirring occasionally, until softened, about 15 minutes.
Add cumin and oregano. Cook uncovered, 1 minute, remove from heat. Stir in lime juice. Heat oven to 400.
Place 2 tortillas side by side on an un-greased baking sheet. Divide onion mixture between tortillas. Spread evenly over surface. Sprinkle each with jack cheese and cheddar cheese. Top each remaining tortilla.
Bake in heated 400 oven 8 minutes or until heated through and tortillas are golden. Let stand 5 minutes.
Cut each quesadilla into 6 wedges. Garnish with salsa and sour cream if you wish, serve immediately.
