Curried Deviled Eggs

Makes 6 servings
Complete in 15 minutes

6 hard boiled eggs
1/3 cup mayonnaise
1 Tbsp curry powder
1 tsp grated lemon rind
1 tsp fresh lemon juice
1/2 tsp dry mustard
1/8 ground pepper (cayenne)
1/8 tsp salt
1/8 tsp black pepper

Half eggs lengthwise, remove yolks; press through a sieve into a small bowl. Stir in mayonnaise, curry powder, lemon rind, lemon juice, mustard, red pepper, salt and black pepper. Spoon or pipe mixture (using a large plain tip) into egg white. Place on a plate. Cover with loose plastic wrap. Refrigerate until ready to serve.
