Lisa's Favorite Potato Soup

6 large potatoes
1 medium onion
2 Tbsp butter
1 Tbsp salt
3 cups cream or evaporated milk
instant potato flakes
In a large saucepot, placed diced potatoes, salt and butter and cover potatoes with water, having water 3 inches over top of potatoes. Cook 7 minutes. Add chopped onion and cook until done. use potato masher and mash cook potatoes and onions if you prefer soupier mixture. Cool mixture slightly and add cream. Add enough potato flakes to thicken soup to desired consistency.
