BBQ Whiskey Wet Rub

Ingredients:

1/3 cup raw sugar* (not brown sugar)
1 tsp onion powder
1 tsp garlic powder
1 tsp cumin
1 tsp chili powder
1 tsp Hungarian paprika (hot or sweet)
1 tsp freshly cracked black pepper
1 tsp sea salt
1 tsp ground coriander
1/4 cup extra virgin olive oil
1/4 cup Jack Daniels whiskey

Directions:

Mix the raw sugar with 1 tsp each; onion powder, garlic powder, cumin, chili powder, Hungarian sweet or hot paprika, freshly cracked black pepper, sea salt, and ground coriander.
Stir in1/4 cup of extra virgin olive oil and 1/4 cup Jack Daniels whiskey.
Rub into thick cut of beef or pork, cover and marinate overnight.
Grill** and smoke over wood chips at low heat until done.

*readily available, this unrefined cane sugar unlike brown or white sugar will not burn and caramelize during cooking
**grilling tips - most modern gas grills have 2 burners. Light one side and set at medium/low, soak your chips in water, loosely wrap in foil, and place on top of the hot briquettes. Place the roast over the opposing unlit grill.
