This is so delicious and fragrant...you'll love how easy it is!
2 TBSP extra virgin olive oil
4 strips of bacon sliced in 1/2 inch pieces
2 or 3 cloves fresh garlic, minced
1/2 onion, small diced
1 cup frozen mixed vegetables for soup
1/2 cup frozen celery, bell pepper, onion
4 low salt beef bullion cubes, low sodium
1 qt filtered water
12 oz of your favorite brew (I have used bud select or sam adams summer ale 1/2 a bottle and drink the remainder while cooking!)
2 TBSP maple syrup
1 tsp cumin
1 tsp nutmeg
1 tsp pepper
1 bay leaf
1/2 tsp celery seed
salt or hot pepper sauce to taste (I leave it out)
1 cup dried lentils, rinsed and picked through

Pick out a large pot.. and add extra virgin olive oil, about 1 tbsp bring to heat and add sliced bacon render till tender crisp and remove 2 TBSP of the bacon drippings
Add diced onion and cook till translucent.
Give pot a good stir
Add in all dry spices, stir and add in minced garlic
cook 1 min till fragrant
Add all vegies, stir and cook 3 minutes
Place bullion cubes in water and heat on high 4 min in microwave when boiling add to pot of vegies turn up heat, stir and bring to boil.
When boiling, add BREW and LENTILS then STIR in MAPLE SYRUP.
Place lid on pot and bring to boil then reduce heat to simmer.
COOK 45 minutes.
And its ready to eat!
Serve with Cornbread or French Bread!!
