sausage and rice casserole

1 lb of your fav ground pork sausage (HOT or NOT)
1 Package of Vegetable Rice mix (the saucier the better, I use mushroom flavor)
1/2 cup frozen chop celery, onion, bell pepper blend
1/2 cup frozen chop triple color bell pepper and onion blend
1/2 cup sliced mushrooms, fresh or canned
Fresh Ground Pepper
1/2 cup shreaded colby cheese (Or your Fav)

Cook your ground sausage, stovetop, till no longer pink.

Cook your rice mix, using package dirrection.

Grease a casserole dish and place sliced mushrooms on bottom, Add your fresh ground pepper.

In a large bowl mix cooked sausage, cooked rice mix, frozen vegies. Then pour mix over mushrooms in casserole dish.. spread evenly.

Bake -at- 375 for 25 minutes... check during cooking to make sure it is not getting dried out... stir gently and continue heating.

Sprinkle shreaded cheese over top and cook until nicely melted... remove from oven and serve. DElicIOUS!!
