  • 1 day old tomato focaccia cut into small cubes
  • 1 tablespoon fresh basil
  • 1 cup spinach
  • 1 cup provolone cheese, shredded
  • 1 cup Parmesan cheese, shredded
  • 6 eggs
  • 3 1/2 cups milk
  • 1 teaspoon ground oregano
  • 1 teaspoon minced garlic

In a 12 x 8 x 2 inch pan layer bread cubes, basil, spinach and cheese. Combine eggs, milk, oregano and garlic; stir well. Pour over bread cube mixture top with more Parmesan cheese. Cover and refrigerate 1 hour or overnight.

Bake at 325 degrees F for 55 to 60 minutes.
