Mini Tomato Tarts

30 Mini Fillo Tarts (such as Athens)
1 14.5 oz. can or jar of petite diced tomatoes
1 small onion, diced finely
2 tsp. dried basil
1 tsp. garlic powder
1 tsp. oregano
kosher salt and pepper to taste
1/2 cup shredded mozzarella cheese
1/2 cup shredded Parmigiano Reggiano cheese
Preheat oven to 350 degrees. Arrange mini fillo tarts on two cookie sheets. Drain tomatoes in a colander. Toss with onion and spices in a large mixing bowl. Divide tomato mixture among min fillo tarts. Sprinkle with cheeses. Bake for 10-12 minutes until cheese is lightly browned.
