Sausage Jambalaya

2 tablespoons Canola Oil
3 to 4 cloves garlic, minced
1 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped celery
1 pound smoked sausage, sliced thin
1 (14 1/2 oz.) can chopped tomatoes, undrained
1 cup low-sodium chicken or beef broth
1 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon cayenne pepper, more or less to taste
1 bay leaf
1 cup uncooked rice
1/2 cup chopped green onions

1.HEAT oil in large heavy saucepan over medium heat. Add garlic, onion, green pepper and celery. Cook 5 minutes, stirring often. Add sausage. Cook 3 minutes, stirring often.

2.ADD tomatoes with liquid, broth, salt, thyme, cayenne pepper and bay leaf. Bring to a simmer and cook 10 to 15 minutes, stirring often. Add salt and pepper to taste.

3.ADD rice, stir to mix well; bring to a boil. Lower heat to medium-low, stir well; cover. Cook about 20 to 25 minutes until rice is cooked, stirring often. Add green onion; fluff with a fork before serving.
