Apple Kuchen

No-Stick Cooking Spray
2 cups Quick Bread Mix
1/2 cup sugar plus 2 tablespoons, divided
2 large eggs
2/3 cup milk
1 teaspoon vanilla extract
2 cups peeled, thinly sliced apples
1/2 teaspoon ground cinnamon
1/2 cup Apricot Preserves

1.HEAT oven to 375. Spray an 8 x 8-inch pan with no-stick cooking spray.

2.COMBINE quick bread mix and 1/2 cup of the sugar in large bowl. Beat eggs, milk and vanilla together with a fork. Add to dry ingredients; stir until well mixed.

3.SPREAD batter in prepared pan. Arrange apple slices, slightly overlapping, in rows on batter.

4.BLEND remaining 2 tablespoons sugar and cinnamon. Sprinkle over apples. Spoon preserves on top.

5.BAKE 40 to 45 minutes or until apples are tender and top is golden brown. Serve slightly warm or completely cooled. Cut into squares.
