Greek Meatballs

1 lb. Ground Chuck
1 egg
1 medium minced onion
dash ground allspice
dash garlic powder
juice of 1/2 lemon
3 T. olive oil
1 T. minced mint leaves
3 T. minced parsley
1 slice crusty bread–soaked in water and squeezed dry
Mix all ingredients together and allow to set for about 2 hours. Shape into patties, roll in flour, and fry in pan which is just barely covered with olive oil. When brown on one side, turn and brown on the other side. These may be served as is, or may be immersed in tomato sauce as follows:
In pan in which meat balls have been fried, put one can tomato paste, 2 cans of water, 1 tsp. sugar, and a small bay leaf. Let simmer for about 15 minutes. Return meatballs to pan, and allow to simmer for 10 mins. Delicious served with
BAKED RICE
1 c. long grain rice, 2 1/2 c. chicken or meat broth, 3 T. butter.
Brown uncooked rice in butter in heavy skillet. Pour hot broth over this and stir once. Place in 400 degree oven for exactly 18 minutes. A foolproof recipe- rice is always fluffy and cooked to perfection.
