BUTTER Prawn

Oil for frying
10 large shrimp, cleaned
1 scallion, chopped
1 tsp minced garlic
1/2 inch piece ginger, peeled and minced
2 TBSP Butter or margarine
2 TBSP light soya sauce (or soy, tamari)
Dash of pepper
1/2 tsp sugar
2 TBSP water
Trim legs, devein, clean and pat prawns dry.
Chop scallion, garlic and ginger, for later use.
Heat up oil, deep fry prawn until golden brown. Remove and drain well for later use.
Heat up 2 tbsp of oil, stir fry chopped spring onion, garlic and ginger until aromatic.
Return prawn and seasoning, stir well. Serve.
