Simple and Variable Cinnamon Biscuits

Makes a small serving for 2 or 3
1 c flour
1/2 TBSP baking powder
1/2 tsp salt
1/8 c vegetable oil
1/2 c buttermilk
(or 1/2 c milk add 1/2 TBSP vinegar, let set 15 min before using)
3 TBSP butter
1/4 c sugar
2 TBSP cinnamon or to taste!
Sift flour, baking powder and salt in to large bowl... add in vegetable oil and blend.
Add buttermilk stir to incorporate well.
Dough will be nice and elastic...not too sticky!
Roll out the best you can to a rectangle. I use the method of rolling dough between 2 sheets of plastic wrap.
Dot with butter... smashing and rubbing it into the dough with your fingertips.. the heat from your hands helps soften the butter.
Sprinkle dough with cinnamon and sugar.
Roll jelly roll fashion ... lengthwise...
Pinch edges together and cut into biscuit size bits, 2 inches or so. Place in a round cake pan spaced close together and press biscuit down abit to flatten.
Bake at 450 degrees for 16 minutes... checking every so often.. just bake till light brown.
These would be good with raisins and maybe almond slivers...For Valentines Day... add cinnamon red hots candies and a powdered sugar glaze with almond extract ...YUM!!
