An Improved Zucchini Patty

1 c. shreaded carrot
2 c. grated zucchini
2 eggs, beaten
1/4 c. grated cheese
2 tbsp. oil plus more for frying in skillet
2 tbsp. grated onion
Salt and pepper
1/2 c. cracker crumbs

Mix together. Form into patties before frying. (Best if set in refrigerator a while before frying.) Fry in hot grease of your choice.. til nice and brown and drain on paper towel lined plate.
