Salmon Pizzazz

Ingredients:
2 tablespoons olive oil
2 pounds salmon fillets
1 medium green capsicum, sliced
1 medium Spanish onion, sliced
4 medium white mushrooms, sliced
1 can Italian Style Tomatoes, chopped
1/2 cup grated mozzarella cheese
Salt and pepper to taste
1. Heat oil in large frypan over Medium-High heat.
2. Salt and pepper salmon; place meat-side down in skillet.
3. Add vegetables and sauté 3 to 5 minutes, turning vegetables frequently.
4. Turn fish and add tomatoes. Simmer 3 to 6 minutes longer until fish is just opaque. Do not overcook
