Kathie's Tater Toes

2 large Russet potatoes
6 TBSP pure Butter
1/2 tsp Salt
3 tsp cajun spice blend
4 cloves fresh minced garlic
6 dashes hot pepper sauce
diced green onion for garnish


For 6 servings:

2 large Russet potatoes,(you can leave on peel) scrubbed and made into large cubes,
cook in boiling salted water just til a fork can be inserted... remove from pan with a spider or slotted spoon and place in skillet heated with 3 TBSP Butter...
Stir gently to coat...turn down heat to medium low... let potatoes carmelize (turning slightly brown) before turning or stiring.
Stir gently several times.
Toss in Garlic while heat is still low..to avoid burning.
Add more butter if you like.
Add hot pepper sauce, cajun seasoning; stir gently.
Let heat through and arrange on plate, garnish with green onion...
