Try this recipe once... it's a tangy, sweet delight! I promise you if you love sauerkraut you will crave this often.. it's soooooooooo good!

1 (1lb) pkg. of your favorite smoked sausage, cut into 4 inch pieces
1 TBSP Butter or Margarine
1 medium onion, cut into wedges
32 oz. Sauerkraut, your favorite brand
1 cup apple juice
2 medium apples, cut into wedges
1 large russet potato, diced and parboiled til tender
salt and pepper to taste

Brown sausage in butter in large dutch oven.
Arrange onion, sauerkraut, apples, and potatoes around sausage. Top with apple juice, salt and pepper to taste. Cover tightly, stirring once, for 20 - 30 minutes
