Italian Wild Rice Pilaf

2 tsp olive oil
2 cloves garlic, minced
1 small onion, diced
1/2 cup diced celery
1 cup chopped rehydrated sun-dried tomatoes, or 2 plum tomatoes chopped
1 recipe basic wild rice
2 TBSP minced parsley
2 TBSP basalmic vinegar
1 TBSP toasted pine nuts
salt and pepper to taste
In a skillet over medium high heat, heat the oil. Add the garlic and onions and saute for 5 minutes. Add the celery and saute for 3 minute. Add the sun dried tomatoes or diced tomatoes and saute for 3 minutes.
Add the cooked rice and cook for 1 minute.
Add the vinegar, parsley and pine nuts and cook for 1 minute more.
