Nutty blueberry Pancakes

2 eggs
1/4 cup canola oil
1 1/2 cups low-fat buttermilk
1 cup all-purpose flour
1/2 cup toasted wheat germ
1/4 cup toasted sesame seeds
3 TBSP brown sugar
1 1/2 tsp baking powder
1/4 tsp salt
1 cup washed fresh blueberries

In a large bowl beat together the eggs, oil, and buttermilk.

In a separate bowl, combine the flour, wheat germ, sesame seeds, brown sugar, baking powder and salt.

Add the flour mixture to the egg mixture and mix until blended. Fold in the blueberries.

Spray a nonstick griddle with nonstick spray. Heat the griddle for 1 minute over medium high heat. Add the batter by tablespoons : 2 TBSP per pancake. Cook on one side until edges are bubbly and look dry. Turn the pancakes over and cook for 2 -3 minutes until pancake is golden brown. Repeat until batter is used up. Serve immediately.
