Shrimp and Cheesy Grits

Serves 3 to 4 Prep time: 20 minutes

Ingredients: shrimp, sausage, corn & black bean salsa, bacon, cheese

1 lb large or jumbo shrimp, cooked & peeled
1 lb cooked sausage or kielbasa(beef, pork or turkey), sliced into bite size pieces
¾ cup yellow grits(simply tastier than white)
¼ tsp salt
1 qt corn & black bean salsa
½ cup bacon pieces
1 & ½ cups shredded sharp cheddar cheese
2 tsp chopped cilantro
½ tsp paprika
¼ tsp cumin
(cilantro, paprika, and cumin may be deleted, increased, or substituted to your preference)

Bring two cups water to a boil, add grits and salt, stirring frequently. As grits thicken, add ½ cup of the cheese.

Place salsa in skillet on medium high, when hot, add the shrimp, sausage & other ingredients, except the remaining cheese. Simmer for about 10 minutes.

Dip a serving of grits onto dinner plate, pour on a serving of the shrimp mixture, and sprinkle with the remaining shredded cheese. Yummy!
