Herbed Julienne Potatoes

Ready in: 30-60 minutes
- 2 cups potatoes, cut into thin strips
- 1 small onion
- 1 teaspoon mixed dried crushed herbs (thyme, basil, oregano, rosemary)
- 2 tablespoons butter or margarine
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1 teaspoon salt
- pepper, to taste
- Parmesan cheese, grated
Cook cut potatoes in boiling water until tender. Drain and set aside in a warm dish. Brown onion and herbs in butter. Add flour, stirring until mixed with butter. Add milk, salt and pepper. Cook in a double boiler for 20 minutes (or over VERY low heat in a heavy saucepan, stirring often). Strain or remove onion and pour over cooked potatoes. Sprinkle with Parmesan cheese and serve.
