Pumpkin Bread Pudding

6 C. Dry Wheat Bread Cubes
1/2 C. Finely Chopped Walnuts
3 Slightly Beaten Eggs
14 oz. Can Sweetened Condensed Milk
1 C. Canned Pumpkin
3/4 C. Packed Brown Sugar
2 tsp. Cinnamon
1/2 tsp. Nutmeg
2 C. Milk
1/4 C. Light Rum
1/4 C. Butter, Melted
2 tsp. Vanilla
Combine bread & nuts in 12x7x2" baking dish. In large bowl, combine the eggs, condensed milk, pumpkin, sugar, and spices. Gradually stir in the regular milk; add the rum, butter, & vanilla. Stir to combine. Pour over the bread cubes and nuts. Place the dish in a 13x9x2" baking dish placed on oven rack; add hot water to 1" depth. Bake at 350 degrees for 50-60 minutes or till knife inserted off center comes out clean.
Serve warm or chilled, with whipped cream if desired.
