TOMATO GNOCCHI & FLORENTINE SOUP
Category: SOUPS & STEWS
I have said it before, I am an unashamed pasta hound, so any recipe I develop using pasta is a plus to me. This zuppe actually started out by trying to use leftover sausage gravy, but turned into a winner with my family.
Serve 6-8
Ingredients
8 oz. frozen gnocchi dumplings
16 oz condensed tomato soup
1 cup chopped fresh spinach
1/2 pound sausage, ground turkey or turkey sausage-cooked
1 (4.5 oz) envelope of sausage gravy mix
3 cups skim milk
1 medium onion diced small
3 stalks of celery plus tops! diced small
1 cup frozen diced carrots
3 cups chicken broth-more if you like thinner soup
Directions:
1.In a large pot over medium heat using 2 Tablespoon oil or butter add the diced celery and the onion. Cook over until tender.
2.Add the sausage and cook until it is no longer pink.
3.Add 3 cups milk and slowly add the packet of sausage gravy mix, stirring constantly.
4.Cook over medium heat until sausage thickens, this cooks out the flour taste.
4.Add the condensed tomato soup, chicken broth and chopped spinach.
5.Cook over med/low heat; add gnocchi dumplings and cook just until dumplings are tender about 10 minutes, stir occasionally carefully so you don't break dumplings up.
