CROCK POT GINGER PEPPER STEAK

This recipe uses fresh ginger, the best way to get good ginger is to look for a "hand" that is smooth and light tan, do not buy it if it's wrinkled. You can freeze unused whole ginger, and grate or slice as needed!

Serve 4-6
3 pounds of center cut Chuck Steak cut into strips
1 Tablespoon minced garlic
1 large onion sliced thinly
2 medium red bell peppers cut into strips
1 medium green bell pepper
1 medium yellow bell pepper
3/4 cup low sodium teriyaki sauce
1 tablespoon grated fresh ginger
2 teaspoons brown sugar or honey
1 teaspoon salt
1/4 sake or beef broth
1 tablespoon cornstarch mixed with 1/4 cup beef broth
fresh ground pepper to taste
cooked brown rice for serving

Directions:
Place all the ingredients except sliced peppers & cooked rice into a 6 qt crock pot insert. The last hour add the peppers to the meat mixture. 10 minutes before serving add the cornstarch mixed with beef broth and cook uncovered on high or until mixture is thickened.
Cook on HIGH for 4-6 hours
Cook on LOW for 8-10 hours.
Serve over rice
