TACO POTATO CASSEROLE

We are all trying to stretch our grocery dollar. Casseroles are the perfect way to serve your family what they like in an economic way!
Serves 6-8

1 pound Ground Turkey cooked
1 cup onions diced small
2 Tablespoon butter
2 eggs
1/2 cup bread crumbs
3 Tablespoon chopped parsley
1 envelope of low sodium taco seasoning
2 cups mixed vegetables (carrots, corn, green beans)
1 (4oz)package of garlic mashed potatoes-prepared as per package directions.
1/4 cup green onions, sliced
1 1/2 cup shredded Mexican blend cheese

Directions:
Preheat oven to 375 degrees.
grease a 13x9" baking pan
Brown the ground turkey and onions in the butter.
In a large bowl add cooked meat mixture, eggs, bread crumbs, chopped parsley and taco seasoning, mix well.
Spread the meat mixture in the bottom of the prepared dish.
Spread the mixed vegetables evenly over the meat in the pan.
Spread the prepared garlic mashed potatoes over the veggies.
Sprinkle the cheese and sliced green onions over the mashed potatoes.
Bake for 25-30 minutes or until browned and bubbly and heat through.
