SPICED CHICKEN AND SWEET POTATOES WITH PINEAPPLE

This dish can be baked or cooked the crock pot. The sweet potatoes and pineapple make it a one pot dinner. Serve with some lemon rice!

Serves 4-6
6 Boneless Skinless Chicken Breasts or 10 Boneless Chicken Thighs
1 teaspoon salt
1/2 teaspoon ground pepper
1 1/2 teaspoons Apple Pie or Pumpkin Pie Spice.
4 medium(about 4 " long)sweet potatoes or yams-peeled and sliced into 1 inch slices
1( 10.75oz) low sodium cream of chicken soup
1 bay leaf
1 teaspoon chopped parsley
1 medium onion chopped coarsely
2 stalks of celery cut into 1 inch pieces
1 can of pineapple chunks with juice reserved
2 teaspoons brown sugar or honey
Cooked lemon rice

Directions:
Preheat oven to 350 degrees
Place the sweet potatoes on the bottom of a greased baking dish.
Layer the chicken of choice on top of the sweet potato
In a small bowl mix the seasonings, pineapple, parsley, onions, celery, soup and brown sugar together. Pour over the chicken in the baking dish.
Cover and bake for 35-40 minutes or until chicken is done and potatoes are tender.
Serve over rice.
CROCK POT:
Layer sweet potatoes in the bottom of the crock pot
Layer the chicken on top of the sweet potatoes
Pour the mixture from the bowl over the chicken.
Cook on LOW for 8-10 hours
Cook on HIGH for 4-6 hours
Serve over cooked lemon rice

Note:I find it easier to use blends-it's less expensive and less space in my cupboard, but to substitute individual spices for Apple Pie or Pumpkin Pie use the following:
1/2 teaspoon cinnamon
1/2 teaspoon cardamon
1/8 teaspoon nutmeg
1/4 teaspoon cloves-optional
1/4 teaspoon allspice
Yams and sweet potatoes are different things. Sweet potatoes are a yellowish color, yams are deep orange to red color depending on the varietal
