ITALIAN BEEF STEW

This recipe is unusual because it uses sweet potatoes instead of white potatoes. You can use yams as well.

Serves 6
2 pounds of chuck stewing beef-1"cubes
2 cups or 10oz of frozen stew vegetables
1 (15oz) can of Italian style diced tomatoes
1/2 cup red wine-optional
1 medium onion coarse chopped
1(1.5oz) envelope of mushroom or onion soup mix
3 stalks of celery coarse chopped
1/2 teaspoon Italian seasoning
1/4 teaspoon thyme
3 medium Sweet potatoes or yams cut into cubes-added in the last 2 hours of cooking.

Directions:
Combine all the ingredients except sweet potatoes in a 5 quart crock pot insert and cover. Cook on LOW for 8-10 hours on HIGH 5-6 hours. Add sweet potatoes into the crock pot the last 2 hours of cooking time.
