CREAMY FRESH BRUSSEL SPROUTS WITH PROSCUITTO

This way was the only way I could get my boys to eat brussel sprouts. It got to the point that they would ASK me to make these for them. That was cool!
Serves 4
2 pounds of fresh brussel sprouts-make sure there are no brown or yellow outer leaves.
1/2 cup chicken broth
1/2 cup whipping cream
1 medium onion diced small
2 slices of proscuitto or bacon fried and cut into pieces or crumbled
1 Tablespoon madiera wine (optional)
2 tablespoon unsalted butter.
Directions:
Clean the brussel sprouts and cut them into halves.
Melt butter in a large skillet over medium high heat.
Place the brussel sprouts in a single layer in the skillet.
Saute them until they are golden brown.
Reduce the heat to simmmer and add the chicken stock
Cook the brussel sprouts just until tender/crisp.
Remove the brussel sprouts with a slotted spoon and cover to keep warm. Set aside.
Return the heat to Medium high and add the whippeing cream and madeira wine.
Cook stirring constantly until the sauce has reduced by about 1/2 and has thickened slightly.
Taste and adjust seasonings, salt & pepper.
Add the brussle sprouts back into the skillet and toss lightly, cook until the brussel sprouts are heated through.
Put into a serving dish and sprinkle with crisp proscuitto or bacon
Serve!
note: If you can find them brussel spouts still on the stalk they make the sweetest finished product.
