CONFETTI POTATO BAKE

My children loved Au Gratin potatoes when they were little. They still ask for it when we invite them to dinner. My secret was the boxed kind. This recipe doctors it up a bit and takes it from a side dish to a main dish.

Serve 4
1 box of Au gratin potatoes
1 1/2 pound of ground turkey or beef
1 medium onions, diced small
1 stalk of celery diced
1 garlic clove pressed
1 (28 oz)can of Italian stewed tomatoes-diced tomatoes will do as well
1 cup of frozen peas and carrots

Directions:
Pre heat oven to 350°
Spray a 3 qt baking dish with butter flavored cooking spray
In a medium skillet brown ground meat and onions, celery until meat is no longer pink.
Add pressed garlic clove
Stir in tomatoes and frozen peas & carrots.
Prepare Au gratin potatoes according to the directions for oven preparation.
Add the meat & tomato mixture, pour into prepared oven baking dish.
Cover & bake until potatoes are tender.
Approximately 35-40 minutes. After 30 minutes remove cover and continue to bake until the liquid is almost gone but they are still saucey.
Sprinkle with shredded cheese if desired.
Serve
