FLORENTINE SPIRAL MEATLOAF

This is a great way to get veggies into the kids.
Serves 6-8

2 pounds ground meat beef, turkey or a combination of both.
1 package dry french onion soup.
1 egg
1/2 cup bread crumbs
1 medium onions small diced
1/4 cup chopped fresh parsley
1 carrot cleaned & shredded
2 tablespoons butter
10 oz fresh spinach chopped or 10oz frozen spinach thawed,drained and squeezed dry.
1/2 cup Feta cheese-crumbled or your favorite grated cheese.
3 slices of day old bread

Directions:
Preheat oven to 350 degrees.
In a microwave safe dish put the butter, onions, shredded carrots and parsley, cover with wax paper and cook on high for 2-3 minutes or until onion is opaque.
In a large bowl add the ground beef, microwaved veggies, bread crumbs, egg and french onion soup powder.
Mix just until blended to no over mix.
On a sheet of plastic wrap, place the meat mixture into a rectangle about 8x10".
Put the spinach on the meat rectangle, sprinkle it evenly with the feta cheese.
Press everything lightly into the meat.
Roll it with the help of the plastic wrap starting with the NARROW end.
Seal the ends.
Place the 3 slices of bread onto a jelly roll and place the meatloaf on the bread slices-this will help soak up any fat.
Bake uncovered until the juices run clear, about 45 minutes.
Serve with steamed broccoli
