ROASTED APPLE BUTTER PORK TENDERLOIN

I developed this recipe because I had made fresh apple butter in my crock pot and thought the flavors would be great together and they were! The wine is optional.
serves 4-6

Ingredients
1 package of pork tenderloins- the package usually contains two.
2 cups of apple butter.
1/2 cup white wine-chablis works well.
salt & pepper to taste.
1 cup chicken broth
1 clove of garlic pressed
1 shallot diced small

Directions:
Preheat oven to 375 degrees.
Season the pork tenderloins to taste.
Sear the tenderloins in a hot skillet with 1-2 tablespoons of olive oil. Sear on all sides.
Turn the heat down and pour the white wine into the skillet and de-glaze the pan stirring until all the brown bits(fond) comes up from the bottom. If you choose not to use the wine increase the broth to 1 1/2 cups
Add the chicken broth, garlic & shallots to the skillet and reduce until 1/2 cup liquid remains.
Add the apple butter and stir until well blended.
Place each of the tenderloins on their own piece of foil and divide the apple butter mixture between the two.
Seal the foil around the tenderloins and carefully place the tenderloins into a baking dish, making sure the seam side is up. If not the juices will escape the foil.
Bake for 20-25 minutes or until desired doneness.
Let sit for 5 minutes before cutting into slices and serve with baked sweet & spicy potatoes slices.
