VEGETABLE LASAGNA ROLLS

My family loves these. You can use egg roll wrappers, or Barilla pasta sheets.
Ingredients:
8 egg roll wrappers or 8 Barilla Pasta Sheets.
1 container (8 oz)ricotta cheese.
1 cup shredded mozzarella cheese (4 oz)
1/4 cup shredded asiago or Parmesan cheese
1/4 cup chopped parsley
1/2 cup frozen broccoli-thawed drained & chopped into small bite size pieces.
1/2 cup fresh spinach-chopped
1/4 cup shredded carrots.
2 cups your favorite brand spaghetti sauce
Directions:
Pre-heat oven to 350 degrees
If you are using the egg roll wrappers, there is no need to pre-cook them
For Barilla pasta sheets, soak in hot water to soften 2-3 minutes just until pliable.
Remove from water & pat dry.
In a bowl mix the remaining ingredients EXCEPT the spaghetti sauce.
Divide the filling between each noodle.
Spread it evenly over the noodle.
In a baking dish spread 1/2 cup spaghetti sauce over the bottom
Roll them up carefully and place each seam side down into the baking dish with 1/2 cup sauce spread on the bottom.
Sprinkle with cheese if desired.
Bake for 25-30 minutes.
These are easily frozen individually. Wrap each in plastic wrap and place in a large ziploc bag. Freeze
To cook one at a time:
Remove the plastic wrap and put in a appropriate sized dish, cover with 1/4 cup sauce, cover the dish with wax paper and microwave gently(power level 5-6) until heated through.
