INDIVIDUAL MARSALA CHICKEN & STUFFING

These are a great "cook with the kids night" dish! Little hands (and big ones) can handle all of the steps to make these. Start a family tradition!
Serves 6
Ingredients
6 (6oz) boneless skinless chicken breasts
1 box of cornbread or regular stove top stuffing mix with seasoning packets.
3 cups frozen peas or frozen peas & carrots
1 can cream of chicken soup
1/4 cup chicken broth
2 tablespoons white wine or marsala(optional)
1/2 cup sliced green onions
1 cup shredded cheese.

Directions:
Preheat oven to 350 degrees.
Set out 6 pieces of foil approximately 6x6" each.You need them large enough to make a packet that seals securely for baking.
You can also use parchment paper and tie them with butchers string.
Prepare the stuffing mix according to the package. Set aside.
Mix the soup with the chicken broth and marsala/white wine.
To assemble packets:
Place 1/2 cup peas on each foil square.
Place chicken on the top of the peas.
Place a scoop of stuffing on each chicken breast.
Fold edges up and add pour approximately 1/4 cup "chicken sauce" over each chicken breast.
Sprinkle each packet with some cheese and sliced green onions.
Seal each packet well.
Place on a cookie sheet and bake for approximately 30 minutes or until chicken is no longer pink inside.
To serve cut open and place on dinner plates, be careful when you cut them open to serve as there will be hot steam that can severely burn you!
