CHICKEN ALFREDO PENNE WITH CHIPOTLE

This is a great dish that can be made in 30 minutes. Pasta can be boiled the day before and refrigerated for a quick-mix next night meal. This recipe uses several great shortcuts!
Serves 4-6

1 pound penne pasta-cooked, drained
2 cups Alfredo sauce, your favorite brand
6 slices of bacon chopped
1/2-1 teaspoon chipotle powder or to taste-this tends to be hot & spicy so be careful with it!
2 cups cooked frozen grilled chicken strips or leftover chicken or turkey diced.
1/2 cup sliced green onions-reserve some to sprinkle on top!
1/2 teaspoon garlic powder-optional
3/4 cup shredded asiago or parmesan cheese

Preheat oven to 350 degrees.
Cook and drain pasta according to package.
In a large bowl mix all the ingredients with the penne pasta; reserving 1/4 cup of shredded cheese and a tablespoon of green onions to garnish the top.
Pour pasta into a baking dish.
Sprinkle with the reserved green onions & shredded cheese.
Bake for 25 minutes or until bubbly and lightly browned on top.
Serve with streamed broccoli

Spinach or broccoli could easily be added to the this dish to make it a one pot meal. This could even be made on the stove top instead of in the oven.
Any kind of your favorite cheese can be used as well.
