BACON JALAPENO CHEESEY MUFFINS

This recipe has a "secret" ingredient. These muffins make a great addition to a Brunch or special breakfast. They freeze well too!
Makes 1 dozen
1/2 pound of bacon-cut up
Vegetable oil
1 egg, lightly beaten
3/4 cup buttermilk
1 3/4 cups flour
1/4 cup sugar
1 Tablespoon baking powder
1/2 cup cornflakes-lightly crunched up
1 cup shredded sharp cheddar cheese-or your favorite kind or whatever you have in your refrigerator!
1 (4oz)can of jalapeno pepper slices-drained
1 tablespoon chopped fresh chives-optional
Directions:
Preheat oven to 400 degrees
Fry bacon and reserve drippings.
If necessary add vegetable oil to drippings to equal 1/3 cup.
In a medium bowl combine bacon drippings, egg and buttermilk;set aside.
In separate bowl, combine flour, sugar, and baking powder; add the drippings/egg mixture and stir until moistened.
Fold shredded cheese, crumbled bacon, chopped chives(optional) and cornflakes into muffin mixture.
Line 12 muffin wells with muffin cup-liners.
Spoon mixture into tins until 2/3 the way full.
If you have leftover shredded cheese, sprinkle it on top!
Bake for 15-20 minutes.
