CRUNCHY SWEET & SPICY POTATOES

This is a great way to switch up a side dish that tends to get tired. You can leave out the chipotle powder, but I find it gives it a little more interest & depth of flavor.
Use your imagination turn it into a great Indian side dish and add curry powder or nutmeg, cardamon & cinnamon.

3 Medium Sweet potatoes or Yams
1/2 cup unsalted butter
2 Cups crushed Frosted Flakes or Corn Flakes
1/8 tsp ground Chipotle powder or to taste
Salt & Pepper to taste

Preheat oven to 350 degrees

Peel & Slice Sweet Pots/Yams into 1/2 inch thick slices.
Add Chipotle powder to crushed frosted flakes/corn flakes, add salt & pepper to taste
Dip each slice into butter, then into crushed frosted flakes chipotle mixture
Place on a cookie sheet. Bake for 35-45 minutes or until potatoes are tender and coating is lightly browned.
