CAJUN SALMON FILLETS

This is a great quick and easy entree, that will wow guests.

4 fresh or frozen skinless Salmon fillets-about 6 oz each.
Equal amounts of Old Bay Seasoning & Brown Sugar.
For 4 fillets I generally use 1/2 cup of each brown sugar and Old Bay Seasoning. I have used Paul Prudhomes Red Fish Seasoning mix as a substitute for the Old Bay.
You can add more cayenne pepper if you like it spicier.

Mix the Old Bay and Brown Sugar together in a small bowl.
Rub the mixture on both sides of the Salmon. Make sure it's well coated on both sides.
FOR BBQ
Preheat your BBQ & grease your grates so fish doesn't stick.
Place salmon on the grill and cook until desired doneness.
FOR SKILLET:
Place salmon in a hot greased skillet and saute until desired doneness.
FOR OVEN:
Pre-Heat oven to 375 degrees.
Place salmon on an oven safe baking dish and bake until desired doneness.

I usually use my Cuisinart indoor grill. It works great and cooks this dish even faster.
