CARAMEL SUGAR CREAM PIE

1 cup sugar
1/3 cup light brown sugar
1/2 cup all-purpose flour, unsifted
1/2 pint (1 cup) whipping cream
3/4 cup whole milk
pinch of salt
1 (9-inch) pie shell-blind baked
2 tablespoons unsalted butter, cut into small pieces
Pinch nutmeg
Directions:
Preheat oven to 450 degrees F. Blind bake the pie crust and set aside
Combine sugar, flour, cream, and milk in a mixing bowl. Pour into pie shell. Dot butter pieces evenly around top of pie. Sprinkle LIGHTLY with nutmeg.
Bake for approximately 10 minutes, watch the top carefully it will brown very quickly. If you see it browning, reduce the heat immediately to 350 degrees and cook for approximately 30 more minutes.
Cool to room temperature on a cooling rack and then refrigerate until chilled.
Serve chilled with rum flavored whipped cream or your favorite liquer.
Flavored Whipped Cream
1 pint of whipped cream well chilled
confectioners sugar to taste I start with a couple of tablespoons.
This pie is very rich so a less sweet whipped cream works well.
1 tbls dark rum or brandy
Whip until stiff peaks form. Serve immediately
Tip:To keep whipped cream from getting watery in the refrigerator, store in a covered fine sieve lined with cheese clothe. Place the sieve over a bowl to keep the liquid from dripping all over your frig!
