This recipes makes 8 large funnel cakes
4 beaten eggs
4 cups sifted flour
2 tsp baking powder
3 cups milk
1 tsp salt
2 cups cooking oil
powdered sugar and red and green sugar
In mixing bowl combine eggs and milk. Sift together the flour, salt and baking powder. Add to the egg mixture and beat with a rotary beat or hand mixer until smooth. Pour into a pitcher and refrigerate. Have extra milk and flour on hand when you are ready to start frying cakes.
Heat oil in large skiller or deep fat fryer to 360 degrees. Stir the batter with a wooden spoon and test to see if it flows easily through the funnel pitcher. If it is too thick , add milk. If it's too thin add flour.
While covering the bottom opening of the funnel with your finger, pour at least 1/2 cup of batter into the funnel. Remove your finger and release the batter into the hot oil in a spiral shape. Be very careful because the oil will splatter. Fry about 3 min. or until golden brown.
Using the wide spatula and tongs, carefully turnover the cake.
Cook 1 min. more.
Drain on a paper towel
Transfer to a paper plate and sprinkle with sifted powdered sugar (snow) and top it off with sprinkles of red or green sugar.
