  • 4 cups all-purpose flour
  • 4 cups yellow cornmeal
  • 1 3/4 cup nonfat dry milk
  • 1/3 cup baking powder
  • 2 teaspoons salt
  • 1 3/4 cup shortening

Mix flour, cornmeal, dry milk, baking powder and salt. Cut in shortening completely. Refrigerate in airtight container up to 1 month.

To use mix: Combine 1 egg, 1 cup milk, 1/4 cup oil, and 1 1/2 cups of mix until blended. Bake at 400 degrees F for 20-22 minutes in a greased baking dish or muffin tin.
