Cornbread Dressing

2 Boxes Jiffy Cornbread - use box directions. Bake in 9x12 pan night before.
1 cup each chopped onion & chopped celery
1 stick butter
Salt and Pepper to taste
1 1/2 cup chicken stock plus add stock from cooking turkey
2 eggs well beaten and added to mixture just before baking.


Directions:

Crumble cornbread. Saute celery and onion in butter until soft. Add celery and onion to cornbread. Stir lightly. Pour chicken stock and turkey stock over cornbread. Stir lightly. Salt and pepper to taste. Stir in well beaten eggs-stir well. Pour into large baking dish. Bake in 350F pre-heated oven for 30-45 minutes until well browned on top.
