Apple Cranberry Muffins

2 Cups Flour
1 tsp. Baking Powder
1/2 tsp. Baking Soda
Pinch of Salt
1/2 Cup packed Light Brown Sugar
1 tsp. Cinnamon
1/2 tsp. Nutmeg
1/8 tsp. Clove powder
1 Apple, finely chopped
1/2 Cup Dried Cranberries
1 Large Egg
1 tsp. Vanilla Extract
1/2 Cup Vegetable Oil
1 Cup Milk

Spray a 12 cup muffin tin with cooking spray and preheat the oven to 375 degrees.
In a medium sized mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, nutmeg and cloves. In a separate bowl, combine the Vanilla and egg with the oil until well mixed, add the sugar, milk and apples, mix well. Add the wet ingredients into the flour mixture slowly and mix until incorporated. Add the cranberries until just moist. Fill the muffin cups until all of the batter has been used. Bake at 375 degrees for 20 to 30 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven and turn out onto wire rack to cool.
