  • 1 1/4 cup butter, at room temperature
  • 2 cups sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup additional sugar, for coating

Preheat the oven to 350 degrees F.

Combine the butter and sugar in a mixing bowl. Beat on medium speed with an electric mixer until fluffy.

With the mixer running, add the eggs one at a time, scraping down the sides as needed. Add the vanilla.

In a bowl, combine the flour, baking powder, and salt. Slowly add to the sugar mixture, mixing until just blended.

Scoop out walnut-sized balls of dough and roll into a ball. Roll each cookie ball in additional sugar.

Place the cookies on a baking sheet about 2 inches apart. Flatten each cookie slightly with the bottom of a glass that has been dipped in sugar.

Place the baking sheet in the oven and bake at 350 degrees F for 8-10 minutes or until the edges just start to turn light brown.

Remove the cookie sheets from the oven and let the cookies cool for 5 minutes then remove them to a cooling rack to cool completely. Store the cooled cookies in an airtight container.
