Finnish Rhubarb Pudding

5-6 cups rhubarb, chopped
3-4 cups water

Ingredients:

3/4 cup sugar

4 Tablespoons potato starch
3-4 Tablespoons water

whipping cream


Instructions:

Cook rhubarb in 3-4 cups water until tender, adding the sugar to taste.

Mix the potato starch, with 3-4 Tablespoons of water to make a smooth paste

Then add it to the rhubarb mixture.
Heat to a boil.

Cool, and put in a serving bowl.
Put in refrigerator
( or a snow bank, covered.)
Till serving time.

Serve with whipped cream.
Will make, 8-10 servings
