2 large Eggplants
Bread Crumbs
3 large eggs beaten
Extra Virgin Olive oil, or vegetable oil

****Directions****
1. In a frying pan coat the bottom of the pan with oil.

2. Heat the oil on medium heat until a bread crumb fizzles in it.

3. Slice eggplant into thin slices, or desired thickness)

4. Dip slices in the beaten egg, and then into the bread crumbs.

5. Place the slices in the pan gently, flip when golden brown.

6. When finished cooking place on several paper towels to absorb the excess grease.
