PEANUT BUTTER OATMEAL BARS

Makes 24 bars

1/2 c. butter
1/2 c. brown sugar
1/2 c. granulated sugar
1/2 tsp. vanilla
1 egg
1/3 c. peanut butter
1 c. oatmeal
1 c. flour
1/2 tsp. baking soda
1/4 tsp. salt
1 c. chocolate chips


Preheat oven to 350F.
Line a 9x13-inch baking pan with parchment paper.
In a large bowl, cream butter and sugars.
Add vanilla, egg and peanut butter to creamed mixture and mix well.
In another bowl, sift together dry ingredients; add to peanut butter mixture and mix well.
Spread into pan and bake at 350F for 20 to 25 minutes.
Sprinkle with chocolate chips and return to oven until melted.
Remove from oven and drizzle with Glaze.
Cool, cut into bars.

Glaze
1/4 c. icing sugar
1/4 c. peanut butter
2-4 T. milk

In a small bowl, combine icing sugar, peanut butter and milk.
Add as much milk as is necessary to make an easily-poured glaze.
